INGREDIENTS:
1 (1.5) lb. cubed raw pork or chicken
2 to 3 Tbsp. oil
1 green pepper, diced
1 clove garlic, crushed
salt
12 oz. (300 gms) rice
1 medium onion, diced
3 to 4 tomatoes, peeled and cubed
pinch of saffron
pepper
fresh lemons
Place oil in saucepan; cook meat in hot oil. Add onion,
pepper, salt, tomatoes, green pepper and garlic and reduce heat
to medium temperature. After vegetables appear tender crisp,
add salt, rice and a little water as needed. Simmer until rice
is cooked, remembering to add saffron and stir occasionally
while cooking. Serve with 1/2 lemon per person to squeeze over
each serving. Delicious!
