INGREDIENTS:
*1 can green olives, with pits in preferred
*2 thin lemon slices, quartered
*2 teaspoons coriander seeds, lightly crushed
*1 tablespoon fresh mint
*1 tablespoon fresh basil
*2 garlic cloves, crushed
*Olive oil to cover
*1 can black olives, with pits in preferred
*1/4 red bell pepper, cut into strips
*1 fresh red chile or jalapeno chile, cored seeded and cut into rings
*2 sprigs of Thyme
TO MARINATE GREEN OLIVES:
*Put green olives in a preserving jar or screwtop jar. Add lemon slices. Add coriander,
mint, basil and half of garlic to jar. Cover with olive oil and seal jar.
TO MARINATE BLACK OLIVES:
*Put black olives in another jar. Add red bell pepper, chile, thyme and remaining garlic.
FINAL PREPARATION:
Cover with olive oil and seal jar. Leave to marinate at least 2 days before serving. Use within one week
