2 c. raw spinach 1/4 c. cooked white rice 1 hard-boiled egg, cut in quarters 1 small cucumber, diced 1 small sweet red pimiento, 1/4-inch pieces 1 1/2 oz. crumbled Feta cheese 2 Tbsp. vinegar dressing 4 Greek olives Mix spinach with rice, egg quarters, pimiento, cucumber and Feta cheese. Add dressing. Mix lightly. Garnish with Greek olives.
