TOMATO MARMALADE

A tangy topping for burgers or chicken!



INGREDIENTS:
•6 whole Roma tomato seeded & chopped
•1 cup orange marmalade
•1 tablespoon rice wine vinegar
•1/2 cup yellow onion chopped
•1 teaspoon fresh ginger chopped

PREPARATION:
• In a sauce pan, simmer the ingredients until reduced to a thick sauce. Can be used hot or cold. Try as a hamburger relish, or baste chicken or pork during roasting or barbecue.

WARNING*** Any marinade coming in contact with raw meat,seafood or poultry must be boiled for one minute before using it for basting.
