OX-TAIL SOUP

**Hello  Buzz,    I've  benefited  so  much  from  your  website,  that  I  wanted  to  try  to  give
something  back.   Having  lived  in  Hawaii,  ox- tail  soup  was  a  staple  that  we  loved  often.
I  will  leave  out  the  spam!      You  will  need:     



INGREDIENTS:
3  pounds  of  cleaned  ox- tails
1  carrot   sliced
1   celery  stalk  sliced
parsley    minced,  to  taste 
basil,  minced  to  taste
bay  leaf
2  quarts  beef  stock
salt  and  pepper

METHOD:
Combine  all  in  a  soup  stock  pot  and  bring  to  a  boil,
reduce  to  a  simmer  until  ox- tails  are  cooked  and
stock  in  reduced.   Serve  with   chopped  green  onions
as  a   garnish   over  sticky  rice,  if  desired.
