PESTO/SUN DRIED TOMATO

Pesto sauce with the flavor of sunny Sicily!



INGREDIENTS:
•2 cups dried tomatoes in oil
•1 cup fresh Italian flat leaf parsley
•1/2 cup fresh basil leaves
•3/4 cup extra virgin olive oil
•1/4 cup pine nuts toasted1
•1/4 cup pistacio nuts shelled
•6 clove garlic
•1 tablespoon orange juice orjuice of 1/2 orange
•1 cup Parmesan cheese grated
•1 tablespoon salt

PREPARATION:
•Place all ingredients in a blender and blend until smooth.

Per serving: 249 Calories; 25g Fat (89% calories from fat); 5g Protein; 2g Carbohydrate; 8mg Cholesterol; 987mg Sodium
