NUOC LEO (PEANUT SAUCE)

Thai cooking calls for peanut sauce! Make your own for a fraction of the price!



INGREDIENTS:
• 1 tsp. Peanut oil
• 1 tsp. minced garlic
• 3 Tbsp. Creamy peanut butter
• 1/2 cup Hoisin sauce
• 1 Tbsp. Tomato paste
• 1 Tbsp. Rice wine vinegar
• 1 tsp. hot red pepper flakes or 1/2 tsp. cayenne
• 2 tsp. sugar
• 1/2 cup water

PREPARATION:
• In a sauce pan, cook garlic in oil, being careful not to burn. Add remaining ingredients and stir to blend until creamy. About 3-5 minutes. Cover and chill. Will keep, refrigerated, for about 10 days. Reheat to use, adding water to thin if necessary.

**Can be used for dipping Satay, shrimp, chicken, or any other skewered meats.
