
These toasted cookies with a distinct flavor of almonds and citrus are similar to the traditional Italian biscotti cookies which are best dunked with your favorite Greek Coffee because of their hard texture. 2 sticks unsalted butter 1 cup vegetable oil 1 Tbs Crisco shortening 2 cups sugar 1 cup orange juice and 1 tsp orange peel 6 eggs 2 cups chopped almonds 3 tsp baking powder 2 tsp anise flavoring 7-8 cups flour In a mixing bowl blend well softened butter, vegetable oil, Crisco shortening, and sugar until creamy. (About 10 minutes). Add eggs one at a time. Add flour and baking powder, alternating with orange juice and peel. Add anise and blend until you make soft dough. Separate dough into 6 equal loaves. Mark them like biscotti and bake at 350 for 30-35 minutes. Cut them where you scored them and then lay flat and bake for 15 more minutes until golden brown.
