INGREDIENTS:
1 large Spanish onion, sweet
2 slices tomatoes
salt and pepper
2 small zucchini
1 c. croutons
Jack cheese
Peel and thinly slice the Spanish onion (it should
measure two or three cups when done). Layer in casserole with
zucchini, tomatoes and croutons. Sprinkle each layer with salt
and pepper. Cover and bake at 350 degrees for 1 hour, uncovered, and
then sprinkle with grated Jack cheese and bake until melted.
Note: You may substitute the Spanish onion for a
regular onion.
