MISSISSIPPI BEAUREGARD YAM PIE

A yam (sweet tater pie) pie recipe, made with butter, yams, vanilla, cinnamon and cardamom



This time, try yams instead of pumpkin - you will never go back to pumpkin!

INGREDIENTS: Makes 2 pies

•	4 ounces butter, softened
•	2 cups cooked and mashed Beauregard yams
•	2 cups granulated sugar
•	1 small can (5 ounces, about ˝ cup plus 2 tablespoons) evaporated milk
•	1 teaspoon vanilla
•	⅓  teaspoon ground cardamom
•	3 eggs, beaten
•	1˝ teaspoons cinnamon
•	2 prepared pie shells, unbaked

DIRECTIONS: 

1.  Mix butter, yams, sugar and evaporated milk until well blended.

2.  Add vanilla, eggs, cardamom and cinnamon; mix well. 

3.  Pour into the prepared pie shells. 

4.  Bake in a 350℉ oven for about 1 hour, until set.
