TARAMA

Red Caviar

Taram is the translated word for "money"

INGREDIENTS:

• 1 1/2 cups red caviar

• juice of one lemon

• 4 tablespoons extra virgin olive oil

• 1 4 slices of bread, crust removed

PREPARATION:

• (With fresh caviar) Put the caviar in a soup bowl and pourboiling water over it and then immediately
pour off the water. Be careful not to lose any of the caviar. This removes any impurities. With
commercially prepared caviar you can skip this step.

• Add the bread, olive oil and lemon juice a little at a time and mix well with a fork to blend the
mixture into a thick paste.

• Serve with toast points or pita crisps.
