PREPARATION:
Season the prawns with salt and pepper.
Add red pepper flakes and roasted garlic to goat cheese ( or flavor to suit your tastes**
Press one tablespoon of the herbed goat cheese in the cavity of each prawns.
Wrap each prawn
tightly with one piece of proscuitto.
In a saute pan heat the olive oil.
When the oil is hot, sear wrapped prawns for 2 to 3 minutes on
each side, or until the prawns turn pink.
**You may add spices and flavorings to goat cheese to suit your tastes-remember, a light touch is best.
Garnish with chopped parsley and serve.
