PORK AND CLAMS (Recipe From Southern Portugal)

Wonderful clams Portugese style in a cataplana!



INGREDIENTS:
 

1 doz. fresh clams
1 lb. lean pork, cubed
1 Tbsp. butter
1 Tbsp. olive oil
2 medium onions, chopped
2 tomatoes, peeled and chopped
2 bay leaves
1 Tbsp. paprika
salt and pepper to taste

Brown the pork in butter and olive oil (you must use
olive oil). Remove meat and saute onions until soft. Add meat
and remaining ingredients and cook gently for 10 minutes. Add
clams and cook until clams open. Serve hot with crusty bread.
