MARUYA - BANANA FRITTERS
		
✹INGREDIENTS: Serves 2,  maybe only one

BATTER:
	•	3-5 saba (Cardaba banana) cut in half lengthwise **SEE COOKS NOTE**
	•	1/4 cup flour
	•	1/2 tsp. baking powder
	•	1/4 tsp. salt
	•	1 egg
	•	1/2 cup milk
	•	cooking oil  for frying 

CINNAMON SUGAR TOPPING:

	•	¼ cup White sugar
	•	1 teaspoon ground cinnamon
		
DIRECTIONS:

DIRECTIONS:
1.  Heat about 2 tablespoons of cooking oil in  frying pan or skillet over medium heat.  While you are waiting for that, prepare batter by combining 
    flour, sugar, cinnamon powder, a pinch of salt in a bowl.  In another bowl, combine egg and milk, mix well and pour into the flour mixture.  Stir
    to combine then add diced bananas. 

2. Drop spoons full in the heated pan.  Cook until the edges are brown then flip to cook the other side.  Lay cooked fritters on paper towels to drain 
   excess oil.  Roll “Maruya” in cinnamon sugar if you like, then dip in a brown sugar glaze.

BROWN SUGAR GLAZE
				
      •     ⅓ cup butter
      •     1/3 cup firmly packed light brown sugar
      •     1/3 cup sugar
      •     1/3 cup whipping cream
      •     1/2 teaspoon vanilla extract

DIRECTIONS:
Combine first 4 ingredients in a heavy saucepan. Bring to a boil over medium heat, stirring constantly; boil 1 minute. Stir in vanilla extract.
**COOKS NOTE**
1.  You may not find “Cardaba” bananas,  but ripe plantains or near ripe bananas from your market should be just fine.
