JALAPEÑO AND KEY LIME STICKY WINGS
The sweet tangy flavor of Key Limes gives this dish a whole new look at "party wings".

JALAPEÑO & LIME STICKY WINGS
INGREDIENTS: SERVES 4
MARINATE THE CHICKEN:
● 2 Lbs. Chicken wings, disjointed with tips removed and saved for stock.
● ¼ cup soy sauce
● Juice of 1 Key Lime
● 2 Tablespoon(s) Distilled white vinegar
● 1 Teaspoon(s) Kosher salt
● ½ cup water
DIRECTIONS:
1. Place the marinating liquid in a large ZipLock® bag, add the chicken wing sections and marinate for 2 hours. Discard
the marinade.
2. On a charcoal or gas barbecue, grill the wing sections on all sides until you nice golden brown grill marks. About
6-10 minutes.
✚ Preheat your oven to 400℉
3. Spread the grilled wing sections, in one layer, into a large baking pan lined with foil. Evenly pour basting sauce
over the wings and bake for 15-20 minutes**SEE COOK'S NOTE**.
4. Let the wings cool slightly and then serve with lots of napkins.
COOKS NOTE*
1. The basting sauce should have turned to a thick syrupy consistency. This would be the time to remove the wings from
the oven.
INGREDIENTS BASTING SAUCE:
● 3 Tablespoon(s) Pickled Jalapeno pepper rings
● ½ cup fresh cilantro
● 3 garlic cloves
● Zest of 2 Key Limes
● Juice of 2 Key Limes
● 1 Teaspoon(s) Mexican oregano
● 1 Tablespoon(s) cumin
● 1 Tablespoon(s) Paprika
● 2 Tablespoon(s) brown sugar
● 2 Tablespoon(s) vegetable oil
● 1 Teaspoon(s) Kosher salt
DIRECTIONS BASTING SAUCE:
1. In a bowl, combine jalapeno pepper, cilantro, oregano, garlic, lime zest and juice, paprika, cumin, brown sugar, oil, and salt.
Blend well & set aside.
2. When wings are broiled, pour the basting sauce evenly over the chicken wings and bake.
