EGYPTIAN KOSHARI - A VERY POPULAR STEET/COMFORT FOOD

Chick peas, brown lentils, pasta, rice and crispy fried onions together with a spicy vinegar based sauce will melt the heart of any Egyptian.

EGYPTIAN KOSHARI WITH SHATTA

INGREDIENTS: SERVES 6-8

◼  1 cup  chick  peas,  for topping   
◼  1 cup  brown  lentils    
◼  1 cup  orzo,  uncooked **SEE COOK'S NOTEs**   
◼  2 large  onions,  diced.    
◼  2  tablespoons  olive  oil.    
◼  2 cups  tomato  sauce.    
◼  hot  chili  sauce,  to  taste.    
◼  salt  to  taste.        

DIRECTIONS: 
    
1. Soak  lentils  over-night  in  water,  sort,  rinse  and  drain,  set  aside.    

2.  Cook  lentils,  rice,  orzo,  in  large  pot.     
 
3.  Brown   onions,  drain  on  paper  towel,  strain  oil into  lentil  mix,   

4. Cook  10  m inutes  more,  stir,  place  mixture  on  plates  serve  with  shatta.     

INGREDIENTS FOR SHATTA:

◼  Kosher  salt  to  taste.     
◼  Fine  minced  garlic,  6  cloves.     
◼  2 Tablespoons  lemon juice or White vinegar    
◼  1 teaspoon cumin 
◼  3  or  4  chili  peppers,  chopped      
◼  1 cup  parsley,  chopped     
◼  1  cup  cilantro,   chopped  
◼  2  Tablespoons  olive  oil,  Extra Virgin 

DIRECTIONS FOR SHATTA: 
 
1.  Blend  all  in  blender,  while  running  add  1.  cup  of  water  and  oil.
   
2.  Blend  to  smooth,    
 
3.  simmer  mix  until  cooked. 

**COOKS NOTES** 
1.  Any small pasta will do here.
