BROCCOLI SALAD WITH PEANUT/CRAISIN DRESSING

INGREDIENTS: Serves 6

⚫  4½ cups broccoli florets 

⚫  ½ cup chunky Jif® peanut butter 

⚫  ½ cup olive oil 

⚫  ¼ cup rice wine vinegar 

⚫  ½ cup orange juice 
⚫  1 teaspoon Oriental sweet chili sauce or Tabasco® sauce

⚫  ½ teaspoon salt 

⚫  ¼ teaspoon freshly ground black pepper
⚫  ¼-⅓ cup of "craisins®", dried cranberries

DIRECTIONS: 

1.  Blanch broccoli florets in hot salted water for about 3 minutes. Refresh in a bowl of iced water and
     drain.

2.  Whisk Jif® peanut butter with remaining ingredients in a bowl until a vinaigrette is formed. Add
     broccoli, toss, top with a few craisins and serve. 

**COOK'S NOTES**
The tossed salad may be stored in refrigerator for 6 to 8 hours if need be.
