BRITISH APPLE AND CINNAMON COFFEECAKE

A coffeecake in the true British tradition.

INGREDIENTS:Serves 6

        •	1 teaspoon cinnamon 
	•	1 lemon, juice of
	•	¾ cup butter
	•	½ cup raisins
	•	1 tablespoon honey (warmed) 
	•	½ cup milk 
	•	2 medium apples (peeled & sliced) 
	•	1 cup flour 
	•	½ cup whole wheat flour 
	•	3 large eggs 
	•	½ cup brown sugar 
	•	cinnamon sugar (topping)

DIRECTIONS: 

1.   Preheat oven to 350°F.
2.   Grease a 9x13 springform pan.
3.   Beat butter & brown sugar until fluffy.
4.   Add lemon juice & eggs, beat well.
5.   In another bowl, stir this together the flours & cinnamon.
6.   Fold flour mixture into brown sugar mixture, add milk & raisins.
7.   Pour batter into 9 x 13 springform pan.
8.   Arrange apples on top.
9.   Bake 1 hr.
10. After taking cake out of oven brush with warm honey & sprinkle with cinnamon sugar.
