FRESH HOMEMADE PASTA - FOOD PROCESSOR METHOD

✹INGREDIENTS: Example: Recipe makes 24 ravioli
• 1 cup semolina flour **SEE COOKS NOTE**
• 1 cup all purpose flour
• 1 pinch salt
• 3 large eggs
• 1 Tablespoon(s) olive oil

DIRECTIONS:
1. Put the flour and salt into the bowl of a food processor. Pulse a couple of times to combine.
2. Add the eggs and olive oil to the food processor and turn on, letting run for about 30 seconds until the dough comes
together around the blades. If it is dry and pebbly looking, add one Teaspoon(s) of water at a time and pulse. If it is wet
and sticking to the sides of the bowl, add flour a Teaspoon(s) at a time and pulse until the desired consistency is met.
You want the dough to be a little bit stiff, but easy to form into a smooth shape.

**COOKS NOTE**
1. I use “Bob”s Red Mill” Durham Wheat Semolina and All Purpose flour. Gives the pasta nice golden color and a little more body for fillings.
