KOURABIA - ARMENIAN BUTTER COOKIE

A melt-in-your-mouth butter cookie that is a Christmas cookie in Armenian households.

KOURABIA - ARMENIAN BUTTER COOKIE
INGREDIENTS:Makes 2 dozen
● 2 cups sweet butter, softened or clarified room temperature butter
● 1 egg
● 1 tablespoon Armenian Rachi or Greek Ouzo (Anise flavor liqueurs)
● 2 teaspoons vanilla
● 5 cups flour
● Colored candy sprinkles or powered sugar for garnish
✚Preheat oven to 275.
DIRECTIONS:
1. Beat butter, egg and rachi with mixer until white and fluffy.
2. Add sugar and vanilla and beat well.
3. Add 4 cups flour one cup at a time.
4. Add more flour ¼cup at a time until dough is no longer sticky.
5. Roll out ¼ at a time to a long rope, ½ inch thick. Dough can be colored with food coloring or decorate with sprinkles.**SEE COOK'S NOTE - 1**
6. Slice on the diagonal about 2 inches long and place on a cookie sheet sprayed with cooking spray.**SEE COOK'S NOTE - 2**
7. Bake for about 20 minutes, until slightly firm. Do not allow to brown.
COOKS NOTE*
1. Cookies can be dusted with powdered sugar instead of the holiday looking sprinkles.
2. The cookies can also be rolled into a 1 inch ball, baked and sprinkled with powdered sugar instead of sprinkles.
