TUNISIAN HARISSA BLEND - A DRY SPICE MIX
This is a North African spice mix, but goes well with many Mediterranean and Middle Eastern recipes. Hot and spicy, but you can use tamer peppers when making it.
Harissa paste tastes good with couscous dishes, on cold meat sandwiches or sprinkle it onto meat before cooking. Great on broiled or barbecued meat, soups and stews, and even on sandwiches and spreads.

INGREDIENTS: Serves 4
• 2 tsp cumin seeds
• 2 tsp coriander seeds
• 4 tbsp dried red chillies, chopped
• 2 tsp mild paprika powder
• 1 tsp sea salt
• ˝ tsp caraway seeds, ground
• 1 tsp mint, dried
• 1 ˝ tsp garlic flakes, dried
• some water
• some olive oil, extra virgin
METHOD:
1. Dry-roast and then grind the cumin and coriander seeds.
2. Mix all the dry ingredients together.
How to prepare for use:
3. Mix the blend, as much as you need, with an equal amount of water, then just enough
oil to create the consistency you desire.
4. Store the unused dry mix in an air-tight container.
