BROCCOLI SALAD WITH PEANUT DRESSING

The perfect combination!



INGREDIENTS:
4 1/2 cups broccoli florets
1/2 cup chunky Jifฎ peanut butter
1/2 cup olive oil
1/4 cup rice wine vinegar
1/2 cup orange juice
1 teaspoon Oriental chili sauce or Tabascoฎ sauce
1/2 teaspoon salt
1/8 teaspoon freshly ground black pepper

PREPARATION:
•Blanch broccoli florets in hot salted water for about 3 minutes. Refresh in a bowl of iced water and drain.

• Whisk Jifฎ peanut butter with remaining ingredients in a bowl until a vinaigrette is formed. Add broccoli, toss, and serve. The tossed salad may be stored in refrigerator for 6 to 8 hours.
